Preheat Oven

Preheat your oven to 375°F (190°C).

Prepare Mushrooms

Clean the mushrooms with a damp cloth and remove the stems. Set the caps aside and chop the stems finely.

Cook Spinach

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the chopped spinach and cook until wilted. Remove from heat.

Make Filling

In a large mixing bowl, combine the cooked spinach, cream cheese, grated Parmesan cheese, chopped mushroom stems, breadcrumbs, salt, and black pepper. Mix well until all ingredients are combined.

Stuff Mushrooms

Using a spoon, fill each mushroom cap with the spinach mixture, pressing slightly to ensure the filling stays in.

Bake

Place the stuffed mushrooms on a baking sheet and drizzle with the remaining tablespoon of olive oil. Bake in the preheated oven for 20-25 minutes or until the mushrooms are tender and the tops are golden.
