Prepare the Cauliflower
In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes or until tender. Drain and set aside.
Cook the Gnocchi
In the same pot, add more salted water and bring to a boil. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes or until they float to the top. Drain and set aside.
Sauté the Ingredients
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the cooked cauliflower and sauté for another 2-3 minutes.
Combine Everything
Add the cooked gnocchi to the skillet with the cauliflower. Pour in the orange juice, sprinkle the orange zest, salt, and black pepper. Toss everything gently to combine and heat through for about 2 minutes.
Serve
Remove from heat, garnish with chopped parsley, and serve warm.
