Preparation of Apple Juice

Start by gathering fresh apple juice. If you have whole apples, press them to extract the juice.

Mixing Ingredients

In a large fermentation vessel, combine the fresh apple juice, water, sugar, acid blend, and pectic enzyme. Stir well to dissolve the sugar.

Adding Yeast

Sprinkle the champagne yeast over the mixture and stir gently. Allow it to sit for about 10 minutes to let the yeast hydrate.

Fermentation Process

Cover the fermentation vessel with an airlock. Let it ferment in a cool, dark place for 1-2 weeks, or until bubbling stops.

Dry Hopping

Once fermentation is complete, add the dry hops to the cider. Let it sit for an additional 3-5 days to infuse the hop flavor.

Bottling

After the dry hopping period, siphon the cider into clean bottles, leaving some space at the top. Seal the bottles.

Carbonation

Let the bottles sit at room temperature for another week to carbonate. After that, refrigerate before serving.
