1. Mashing
Combine the Pilsner malt, Munich malt, and Caramunich malt in a large pot with 10 cups of water. Heat the mixture to 152°F (67°C) and maintain this temperature for 60 minutes.
2. Sparging
After mashing, sparge the grains with hot water to collect the wort. Aim for about 5 gallons of wort.
3. Boiling
Bring the wort to a boil and add the Hallertau hops. Boil for 60 minutes, stirring occasionally.
4. Cooling
After boiling, cool the wort rapidly using a wort chiller or ice bath until it reaches about 65°F (18°C).
5. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel with an airlock and ferment at 50-55°F (10-13°C) for about 2 weeks.
6. Bottling
After fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the beer. Bottle the beer and cap securely.
7. Conditioning
Let the bottles condition at room temperature for about 2 weeks before refrigerating.
