Heat 5 gallons of water to 165°F (74°C). Add the Pale and Crystal malts to the water and hold the temperature at 150°F to 155°F (65°C to 68°C) for 60 minutes.

Mashing

After mashing, sparge the grains with hot water to collect approximately 6.5 gallons of wort.

Sparging

Bring the wort to a boil and add Northern Brewer hops. Boil for 60 minutes, adding Cascade hops in the last 15 minutes.

Boiling

Cool the wort quickly to 68°F (20°C) using a wort chiller.

Cooling

Transfer the cooled wort to a sanitized fermenter, add the California lager yeast, and ferment at 65°F to 70°F (18°C to 21°C) for about 1-2 weeks.

Fermentation

After fermentation is complete, dissolve priming sugar in a small amount of water and add to the beer before bottling.

Bottling

Bottle the beer and let it carbonate for 1-2 weeks at room temperature.
