Muddle
Place the fresh mint leaves and the fresh lime juice into a cocktail shaker. Add the optional simple syrup if you prefer a slightly sweeter drink. Gently muddle the mint leaves once or twice—just enough to release the oils, not to shred the leaves (about 5–8 gentle presses).
Shake
Add 4 ice cubes to the shaker along with the elderflower liqueur. Secure the shaker and shake vigorously for about 10 seconds to chill and lightly dilute the mixture.
Strain
Strain the shaken mixture (use a fine strainer if you wish to remove small mint fragments) into a chilled flute or a Collins glass filled with the serving ice cubes if you prefer it on the rocks. If serving in a flute, skip the serving ice and pour directly.
Top with Prosecco
Carefully top the strained base with the chilled prosecco (about 6 fl oz). Pour slowly to preserve effervescence and to let the layers mingle gently without overflowing.
Garnish & Serve
Give the drink a gentle stir (1–2 turns) to integrate layers. Garnish with a lime wheel or twist on the rim and a fresh mint sprig. Serve immediately while bubbly.
