Cocktail

1

Chill glass

Place a coupe or Nick & Nora glass in the freezer or fill it with ice water to chill while you prepare the cocktail.

2

Measure ingredients

Measure 2 tablespoons (approx. 30 ml) Japanese whisky, 2 tablespoons Aperol, 2 tablespoons amaro, 1/2 tablespoon fresh lemon juice, and 1/4 tablespoon simple syrup. Using tablespoons helps keep the classic Paper Crane proportions (equal parts spirits with a touch of acid and sweetness).

3

Add to shaker

Fill a cocktail shaker with fresh ice (enough to come to about two-thirds full). Add the measured whisky, Aperol, amaro, lemon juice, and simple syrup to the shaker.

4

Shake

Secure the shaker and shake vigorously for about 12–15 seconds, or until the shaker is very cold to the touch and properly diluted (you'll feel the increased condensation).

5

Prepare glass

If you chilled the glass with ice water, dump the ice water now. If you used the freezer, remove the glass from the freezer.

6

Strain

Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne and a fine mesh strainer to remove small ice shards and any pulp from the lemon juice.

7

Garnish and serve

Express a lemon twist over the drink to release oils, run the twist around the rim, and drop it into the glass as a garnish. Serve immediately.
