Mango Base
Make mango purée
Place diced ripe mango, 2 tablespoons fresh lime juice, honey, and cold water in a blender. Blend until smooth and slightly thick. Taste and adjust sweetness with remaining 1 tablespoon lime juice or more honey if needed.
If you prefer a smoother drink, strain the purée through a fine-mesh sieve into a bowl, pressing with a spatula to remove fibrous bits. Discard solids or reserve for another use.

Prepare jalapeño infusion
Muddle the sliced jalapeño (about half a pepper) briefly in a small bowl or measuring cup to release oils. For mild heat, remove seeds before slicing. Add the muddled jalapeño to the mango purée and let steep for 2–3 minutes, tasting after 1 minute to check heat level. Remove jalapeño slices if you want only a hint of heat.
Lightly slap mint leaves between your palms to release aroma (if using) and set aside for garnish. Cut lime wedges for serving.
To Finish
Top each glass with 4 oz (about 1/2 cup) cold club soda or sparkling water. Gently stir once to combine, being careful not to overdo to preserve fizz.
Garnish each drink with a lime wedge, a slice of jalapeño (optional), and 3 mint leaves. Serve immediately.
