Cocktail

Method

Prep

1

If using fresh strawberries, hull and puree ripe strawberries until smooth. Measure 0.5 oz of puree. Chill a coupe or martini glass in the freezer for a few minutes.

2

If using egg white, separate and measure roughly 0.25 oz (about half an egg white).

Mixing

3

Dry shake (if using egg white)

In a cocktail shaker, add gin, green Chartreuse, fresh lime juice, strawberry puree, simple syrup, egg white (if using) and Angostura bitters. Seal the shaker and dry-shake vigorously without ice for 15–20 seconds to emulsify the egg white and incorporate air for a silky foam.

4

Wet shake

Add a generous scoop of ice to the shaker (about 1 cup). Shake hard for 10–15 seconds until the shaker feels very cold and well chilled.

5

Double strain the mixture through a fine mesh strainer into the chilled coupe or martini glass to remove ice shards and any strawberry seeds for a smooth texture.

Finish & Garnish

6

Express a lime wheel over the drink to release oils, then rim the glass lightly with the lime if desired and drop the wheel into the drink.

7

Float the halved fresh strawberry on the foam or rest it on the rim as a garnish. Optionally add 1–2 small drops of Angostura bitters onto the foam and use a toothpick to create a simple design.

8

Serve immediately while cold. Enjoy.
