Dry shake (if using egg white)
In a cocktail shaker, add gin, green Chartreuse, fresh lime juice, strawberry puree, simple syrup, egg white (if using) and Angostura bitters. Seal the shaker and dry-shake vigorously without ice for 15–20 seconds to emulsify the egg white and incorporate air for a silky foam.
Wet shake
Add a generous scoop of ice to the shaker (about 1 cup). Shake hard for 10–15 seconds until the shaker feels very cold and well chilled.
Double strain the mixture through a fine mesh strainer into the chilled coupe or martini glass to remove ice shards and any strawberry seeds for a smooth texture.
Finish & Garnish
Express a lime wheel over the drink to release oils, then rim the glass lightly with the lime if desired and drop the wheel into the drink.
Float the halved fresh strawberry on the foam or rest it on the rim as a garnish. Optionally add 1–2 small drops of Angostura bitters onto the foam and use a toothpick to create a simple design.
Serve immediately while cold. Enjoy.
