Prepare and grill filet
Remove the 4 oz beef filet from the refrigerator 20–30 minutes before cooking to bring toward room temperature. Pat it dry with paper towels. Lightly coat the filet with 1 tsp neutral oil, then season all sides with 1 tsp kosher salt and 1 tsp freshly ground black pepper.
Preheat a grill or heavy skillet (cast iron) over high heat until very hot (about 5–7 minutes). If using a grill, oil the grates. Place the filet on the hot surface and sear without moving for 2–3 minutes to develop a crust. Flip and sear the other side 2–3 minutes for medium-rare (internal temperature about 130–135°F / 54–57°C). Adjust time ±1–2 minutes for desired doneness. Remove filet from heat and tent loosely with foil. Rest for 5 minutes before assembling so juices redistribute.
Grilled Onions
Caramelize and grill onion slices
While the filet rests, heat a skillet or cast iron pan over medium heat. Add 1 tbs unsalted butter and 1 tsp olive oil. Once the butter melts and foams, add the 1/2-inch onion slices in a single layer. Sprinkle with 1 tsp salt and 1/2 tsp black pepper. Cook, turning occasionally, until golden brown and softened, about 8–12 minutes total. If onions begin to stick, lower heat slightly and add a splash (1–2 tsp) water to deglaze. For a more pronounced grill flavor, transfer onions to the hot grill for 1–2 minutes per side to get char marks after caramelizing in the pan.
Fried Hot Banana

Slice the peeled banana/plantain lengthwise or into 1/2-inch thick diagonal slices, depending on preference. In a small skillet, heat 1/2 cup vegetable oil over medium-high heat until shimmering but not smoking (about 350°F / 175°C if using a thermometer). Carefully add the banana slices in a single layer (do not overcrowd). Fry 1–2 minutes per side, until edges are caramelized and golden. Use a slotted spoon to transfer to a paper towel-lined plate to drain. Immediately season with a pinch of salt and 1/4 tsp cayenne pepper (optional) to give a hot contrast. Keep warm.
Assembly & Extras
Assemble the G G Burger: place the toasted bottom bun on a plate. Add optional lettuce and sliced tomato if using. Place the rested 4 oz grilled filet on top of the vegetables. Layer 2–3 grilled onion slices over the filet. Top with the fried hot banana slices (1–2 pieces) arranged across the meat. Add sauce or mustard if desired, then cap with the top bun. Serve immediately so burger is warm and toppings remain crisp.
