Beets
Preheat oven to 400°F (200°C). Line a baking sheet with foil for easier cleanup.
Trim the beet greens, leaving about 1/2 inch of stems to prevent bleeding. Scrub beets well to remove dirt; do not peel yet.
Toss beets with 1 tablespoon olive oil, 1 teaspoon salt and 1 teaspoon black pepper so they are evenly coated. Arrange in a single layer on the prepared baking sheet.
Roast beets for 40–60 minutes, depending on size, until a small knife inserted into the center meets little resistance. Check at 35 minutes and every 10 minutes after; smaller beets will be done closer to 40 minutes.
Remove beets from oven and let cool until they're comfortable to handle, about 10–15 minutes. Rub skins off with your fingers or a paper towel (skins should slip off easily). If you prefer, peel with a paring knife.
Slice roasted beets into 1/4-inch rounds or wedges, depending on presentation. Keep warm or refrigerate briefly if making ahead.
Whipped Goat Cheese
Place 8 oz of fresh goat cheese into a food processor or high-speed blender. Add 2 tablespoons whole milk, 1 tablespoon heavy cream, 1 teaspoon honey, 1 teaspoon lemon juice, 1/4 teaspoon salt and a pinch (about 1/8 teaspoon) black pepper.
Transfer whipped goat cheese to a bowl or use a piping bag for a neater presentation. Keep chilled until ready to assemble.
Finish & Garnish
To serve, spread or pipe a generous dollop of whipped goat cheese on each plate or on a communal platter. Arrange beet slices over and around the cheese.
Scatter chopped toasted walnuts or pistachios over the beets and cheese, and sprinkle fresh thyme leaves or chopped dill on top.
Finish with a light drizzle (about 1 teaspoon) of extra-virgin olive oil and a final pinch of flaky sea salt and freshly ground black pepper to taste.
Serve immediately at room temperature, or chill up to 1 hour and bring back to room temperature for best texture. Leftovers will keep in an airtight container for up to 48 hours (store components separately if possible).
