Prep & Rim

    Prepare glass rim

    Pour the Tajín and coarse salt (if using) onto a small shallow plate and mix. Run the lime wedge around the rim of a rocks or coupe glass. Dip the wet rim into the Tajín mix, twisting to create an even coat. Set the glass aside.

Mixing

    In a cocktail shaker, combine the fresh grapefruit juice (3 oz), fresh lime juice (0.75 oz), Monday 0% Mezcal (1 oz), and agave syrup (0.5 oz). Add a generous scoop of ice (about 1 cup) to the shaker.

    Shake vigorously for 12–15 seconds until the outside of the shaker is cold and well-chilled. This chills and lightly aerates the mixture to integrate flavors.

    Fill the rimmed glass with fresh ice (if desired). Double-strain the shaken cocktail into the prepared glass to remove ice shards and pulp, or pour directly if you prefer more texture.

    Top gently with club soda (about 2 oz) to add effervescence. Give the drink a very gentle stir (1–2 rotations) to combine without flattening the soda.

Garnish & Serve

    Garnish with a fresh grapefruit slice and the reserved lime wedge. Optionally, express a lime or grapefruit peel over the drink to release oils before dropping it in.

    Serve immediately with a short straw or without. Encourage the drinker to enjoy the Tajín rim with each sip for a bright, savory contrast to the tart grapefruit.
