Rack of Lamb Preparation

Prepare the Rack of Lamb

Preheat your oven to 400°F (200°C). Rub the rack of lamb with olive oil, minced garlic, chopped rosemary, salt, and pepper.

Sear the Lamb

In a hot skillet, sear the rack of lamb on all sides until browned (about 4-5 minutes).

Roast the Lamb

Transfer the rack to a roasting pan and roast in the oven for 20-25 minutes for medium-rare. Let it rest for 10 minutes before slicing.

Sweet Onion Puree

Cook the Onions

In a saucepan, melt butter over medium heat. Add sliced sweet onions and cook until caramelized (about 15 minutes).

Blend the Puree

Add chicken stock, salt, and pepper to the onions. Simmer for 5 minutes, then blend until smooth.

Bordelaise Sauce

Prepare the Sauce

In a saucepan, combine red wine and chopped shallots. Reduce over medium heat until the wine is almost gone.

Finish the Sauce

Add beef stock, thyme, salt, and pepper. Simmer until thickened (about 10 minutes). Whisk in butter before serving.
