Prepare the Steaks
Season the steaks generously with salt and press the coarse black pepper onto both sides of each steak.
Sear the Steaks
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once hot, add the steaks and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest on a plate.
Make the Sauce
In the same skillet, add the remaining tablespoon of butter and the chopped shallots. Sauté until the shallots are soft and translucent, about 2-3 minutes. Carefully pour in the brandy or cognac and scrape the bottom of the pan to deglaze. Allow it to simmer for 1-2 minutes.
Finish the Sauce
Stir in the heavy cream and let the mixture simmer for another 3-5 minutes until it thickens slightly. Season with additional salt and pepper to taste.
Serve
Slice the rested steaks and serve with the creamy pepper sauce drizzled on top. Enjoy!
