Measure and combine
Into a cocktail shaker or mixing tin, add 2 oz dark rum, 0.5 oz aged rum, 0.75 oz fresh lime juice, 0.5 oz fresh orange juice, 0.5 oz orgeat, 0.5 oz falernum, 0.25 oz simple syrup, and 2 dashes Angostura bitters.
- 3
Shake
Fill the shaker with ice (enough to come one-third to halfway up the shaker). Shake vigorously for 12–15 seconds until well chilled and the exterior of the shaker is frosty.
- 4
Prepare serving glass
Dump the chilling ice from the serving glass. Fill the glass about three-quarters full with crushed ice (approximately 1 cup).
- 5
Strain and assemble
Double-strain the contents of the shaker over the crushed ice in the serving glass, using a Hawthorne and fine strainer if available. This will remove small ice shards and any pulp for a smoother texture.
- 6
Top and finish
If desired, gently mound a little more crushed ice on top to form a dome. Grate a small amount of fresh nutmeg over the top (a little goes a long way). Add the mint sprig by lightly clapping it between your palms to release oils, then tuck it into the ice near the rim. Finish with the dehydrated orange wheel or lime wheel perched on the rim or on top of the ice.
- 7
Serve
Serve immediately with a short, sturdy straw. Encourage the drinker to stir lightly to integrate the garnish oils into the top layer before sipping.
