Prepare the Charred Jalapeno

Using a grill or stovetop, char the jalapeno until the skin is blistered and blackened. Allow it to cool, then slice it open and remove the seeds for a milder flavor, if desired.

Prepare the Smoked Pineapple

If using fresh pineapple, slice it into rings and place on the grill until it has grill marks and is slightly caramelized. Alternatively, use pre-smoked pineapple if available.

Muddle Ingredients

In a cocktail shaker, muddle the charred jalapeno, smoked pineapple, and fresh cilantro to release their flavors.

Add Liquid Ingredients

Add the tequila, agave syrup, and fresh lime juice to the shaker.

Shake

Fill the shaker with ice and shake vigorously for about 15 seconds to chill and combine all ingredients.

Strain and Serve

Double strain the mixture into a chilled cocktail glass or over fresh ice in a rocks glass. Garnish with a sprig of cilantro or a slice of charred jalapeno.
