Fit Turkey Wrap

Heat approximately 4.0–4.5 gallons of strike water to 162°F (72°C) to account for mash temperature drop.

Prepare water

Add crushed pilsner malt, flaked corn, and Carapils to your mash tun. Target mash temperature: 150°F (65.5°C). Hold the mash for 60 minutes to achieve a fairly fermentable wort with enough body for an American adjunct lager character.

Mash-in

Raise mash to 168°F (76°C) for 10 minutes to stop enzymatic activity, then begin vorlauf and lauter until runoff is clear.

Mash-out

Sparge with enough water to collect approximately 6.5–6.75 gallons of wort pre-boil (target 5.5 gallons into fermenter after boil, accounting for evaporation).

Sparge

Bring wort to a vigorous rolling boil for 60 minutes.

Boil

At 60 minutes remaining (start of boil) add 0.5 oz Hallertau (bittering). With 15 minutes left add Irish moss or Whirlfloc (1 tsp) and yeast nutrient if using. With 5 minutes left add 0.25 oz Hallertau (late-hop) for subtle noble hop aroma. Keep hop schedule restrained — Miller High Life is very lightly hopped.

Hop additions

At the end of the boil, cool wort rapidly to 48–52°F (9–11°C) using a wort chiller to limit cold break and oxidation.

Chill wort

Aerate the cooled wort well (oxygenate to ~8–10 ppm O2) and pitch an appropriate lager yeast starter or an adequately hydrated dry lager yeast. Target original gravity: ~1.042–1.046 (to reach ~4.4–4.8% ABV).

Pitching yeast

Ferment at 48–52°F (9–11°C) for 10–14 days until activity subsides and gravity is stable for 2–3 days.

Primary fermentation

Raise temperature to 58–62°F (14–17°C) for 2–3 days to allow the yeast to clean up any diacetyl and finish fermentation.

Diacetyl rest

Gradually lower temperature over 3–4 days to near-freezing (34–38°F / 1–3°C) and lager for 3–6 weeks to clarify and mellow flavors. Longer lagering (6+ weeks) yields a cleaner, smoother profile akin to a commercial light lager.

Lagering

If bottling, dissolve 3.25 tablespoons (approx. 3.25 Tbs = ~1.6 oz / ~45 g) corn sugar in 1 cup boiling water; cool and gently mix with the beer before bottling to achieve ~2.2–2.5 volumes of CO2. If kegging, force carbonate to ~2.4–2.6 volumes CO2.

Prepare for bottling or kegging

Bottle and store at 65–70°F (18–21°C) for 1–2 weeks to condition, then cold crash and store at cellar temperature for additional conditioning. For kegging, carbonate and cold condition for at least a week.

Bottle conditioning

Serve cold in a 7 oz portion (pony) or standard pint depending on preference. Expect a light straw color, crisp malt backbone with subtle corn sweetness, minimal hop bitterness, and a clean, smooth finish around 4.6% ABV.
