Prepare the bread
Slice the loaf lengthwise (or into 6β8 sandwich portions). If you prefer a warm sandwich, lightly toast the cut bread under a broiler or in a skillet for 1β2 minutes until just golden.

Layer primary ingredients
If using mayonnaise, spread about 1 tsp (equivalent proportion) on each bread half. On the bottom half, arrange half of the arugula in an even layer, then place thin slices of coppa across the bread so they slightly overlap. Distribute torn/sliced fresh mozzarella over the coppa, then add tomato slices and basil leaves.

Finish assembly
Top the tomato and basil with the remaining arugula and a light scatter of shaved Parmesan. Close the sandwich with the top half of the bread. Press gently to compact layers.

Make quick dressing
In a small bowl, whisk together extra-virgin olive oil, red wine vinegar, Dijon mustard, a pinch of sea salt, and a grind of black pepper until emulsified (about 20β30 seconds).

Toss the arugula and torn mozzarella lightly with 1 tablespoon of the dressing to soften and flavor them before layering on the sandwich. Reserve remaining dressing to drizzle over tomatoes or to serve on the side.
