Ingredients
Margarita Base

Clarify Hot Man Sauce
1. Mix and Clarify
In a small bowl, combine 2 oz of your Hot Man sauce with 1 egg white and 2 tablespoons cold water. Whisk gently to fully incorporate. Let sit for 5 minutes to allow proteins to start binding with solids.
2. Place the mixture into a small saucepan and warm slowly over very low heat (do not boil) to 120–140°F (49–60°C) while stirring occasionally for 3–4 minutes. The egg white will coagulate and trap particulates.
3. Remove from heat and strain the warmed mixture through a fine-mesh sieve lined with cheesecloth (or a coffee filter) into a clean container. Allow to drip through without pressing; this produces the clarified Hot Man sauce with a smooth texture. Chill briefly if needed before using.
Prepare Glass
4. Rub the rim of a rocks or coupe glass with the lime wedge. Dip the rim into the coarse chili-salt to evenly coat. Set the glass aside.
Mix Margarita
5. Add 6 tablespoons (equivalent to 3 oz) reposado tequila, 1.5 oz fresh lime juice, 1 tablespoon orange liqueur, 0.75 oz simple syrup, and 0.5 tablespoon clarified Hot Man sauce into a cocktail shaker.
6. Dry-shake first (shake without ice) vigorously for 10–12 seconds. This emulsifies the clarified sauce for a silky texture.
7. Add a generous amount of ice (about 1 cup) to the shaker and shake again vigorously for 12–15 seconds until well-chilled and slightly diluted.
8. Double-strain the cocktail into the prepared glass over fresh ice (or serve neat in a chilled coupe). Use a fine mesh strainer to catch any remaining solids to keep the drink smooth.
Garnish & Serve
9. Garnish with a lime wheel on the rim or float a thin lime wheel on the surface. Optionally sprinkle a tiny pinch of extra chili-salt on top for aroma.
10. Serve immediately. Stir lightly once if the clarified sauce separates after sitting for a moment.
