Bao Dough Preparation

Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt. Mix well to incorporate all the dry ingredients.

Add Wet Ingredients

In a separate small bowl, mix the warm water and vegetable oil. Gradually add this mixture to the dry ingredients, stirring until a dough forms.

Knead the Dough

Transfer the dough onto a lightly floured surface and knead for about 10 minutes until smooth and elastic.

Let it Rise

Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Prepare the Prawns

In a medium bowl, chop the fresh prawns into small pieces and set aside.

Mix Filling Ingredients

Add the minced garlic, chopped red chili, green onion, soy sauce, sesame oil, salt, and black pepper to the chopped prawns. Mix well to ensure all ingredients are combined.

Assembly and Steaming

Shape the Bao

Once the dough has risen, punch it down and divide it into small pieces (about 10-12). Roll each piece into a ball and then flatten it into a circle.

Fill the Bao

Place a spoonful of the prawn filling into the center of each dough circle. Gather the edges of the dough and pinch to seal, forming a bun.

Prepare for Steaming

Line a steamer basket with parchment paper to prevent sticking. Place the filled buns in the basket, leaving space between them for expansion.

Steam the Buns

Bring water to a boil in a steamer pot. Once boiling, place the steamer basket over the pot and steam the bao for about 12-15 minutes, or until the dough is fluffy and cooked through.
