Method
Fried Plantains
Prepare the Plantains
Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.
Heat the Oil
In a large frying pan, heat the vegetable oil over medium heat until it is hot but not smoking.
Fry the Plantains
Carefully add the plantain slices to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until they are golden brown.
Drain and Season
Using a slotted spoon, remove the fried plantains and drain them on paper towels. Sprinkle with salt while still hot.
Spicy Dipping Sauce
Mix the Ingredients
In a small bowl, combine the mayonnaise, sriracha sauce, lime juice, and garlic powder.
Whisk Together
Whisk the mixture until smooth and well combined. Adjust the spice level by adding more sriracha if desired.
Serve
Transfer the dipping sauce to a serving bowl and serve alongside the golden fried plantains.
