Prepare Bread & Spread

Split and toast

Preheat a skillet over medium heat. Slice the baguette lengthwise, leaving a hinge if desired. Lightly butter the cut interior (optional) and toast cut-side down in the skillet for 1–2 minutes until lightly golden and crisp. Remove from heat.

Mix the pâté and mayonnaise in a small bowl until smooth and spreadable. Add 1 teaspoon soy sauce and 1/2 tablespoon lime juice to loosen and season the pâté slightly; stir to combine.

Spread an even layer of the pâté mixture on the bottom half of the toasted baguette and a thin layer of mayonnaise (if you like) on the top half.

Prepare Meats

Warm the meats briefly so they are at serving temperature. For the Vietnamese pork sausage (giò lụa): slice into 1/4-inch (6 mm) rounds. If it’s refrigerated, warm in a skillet over low heat for 1–2 minutes per side or microwave for 20–30 seconds until slightly warm but not falling apart.

For the char siu (BBQ pork): if cold, warm gently in a skillet over medium-low for 1–2 minutes per side or microwave 20–30 seconds. Brush lightly with 1 teaspoon hoisin sauce mixed with 1 teaspoon soy sauce to enhance glaze and flavor; toss to coat and warm until slightly sticky.

For the headcheese: slice thinly (about 1–2 mm) and set aside at room temperature so it’s pliable. If you prefer it warmed, briefly heat slices in the skillet for 10–20 seconds per side; avoid overcooking so it keeps texture.

Assemble Fillings

On top of the pâté-spread bottom half, layer the meats in this order for best balance: a single layer of giò lụa slices to cover the bread, overlapping slightly; then an even layer of headcheese slices; finally a generous layer of warm char siu slices. Sprinkle 1/4 teaspoon black pepper over the meats.

Dress the pickled vegetables: toss the pickled daikon and carrot with the remaining 1/2 tablespoon lime juice and 1 teaspoon soy sauce to brighten (optional). Spread the pickles in an even layer over the meats.

Top with thin cucumber slices, cilantro leaves, and sliced jalapeño or Thai chili to taste.

If desired, drizzle a little extra hoisin (about 1/2 tsp) over the vegetables for a sweet-savory finish.

Finish & Serve

Close the sandwich, press down gently to compact layers, and slice into 2–3 portions. Serve immediately while meats are warm and bread is crisp.

Leftover components (separately stored) will keep: meats refrigerated for 2–3 days, pâté mixture 2 days, pickles up to 1 week.
