Pork Sausages
Bring sausages to room temperature
Remove sausages from the refrigerator 20–30 minutes before cooking to take the chill off. This promotes even cooking.
Score sausages (optional)
If desired, lightly score each sausage casing with 2–3 shallow diagonal slashes. This helps the glaze penetrate and prevents excessive bursting while cooking.
Marinade / Garlic-Sugar Glaze
Make the glaze
In a small bowl, whisk together minced garlic, light soy sauce, hoisin sauce, brown sugar, rice vinegar, sesame oil, black pepper, and chili flakes (if using) until sugar is mostly dissolved and mixture is uniform.
Reserve glaze for basting
Set aside about 2 tablespoons of the glaze in a separate small bowl for serving as a dipping drizzle. This prevents cross-contamination from raw meat juices.
Par-cook (optional for thicker sausages)
For thick sausages or to reduce grill time, place sausages in a saucepan, add enough water to come 1/3 up the sides, bring to a gentle simmer, and poach uncovered for 6–8 minutes. Drain and pat dry before grilling. If skipping poach, proceed directly to grilling.
Grill with basting
Place sausages on the preheated grill or skillet. Cook 12–16 minutes total over medium-high heat, turning every 2–3 minutes so all sides brown evenly. Starting at about the 6–8 minute mark (when sausages are mostly cooked through and have good color), brush the sausages generously with the glaze every 1–2 minutes for 4–6 minutes, allowing the sugars to caramelize but not burn. Aim for an internal temperature of 160°F / 71°C for pork sausages.
Caramelize carefully
If the glaze begins to blacken too quickly, move sausages to a cooler part of the grill or reduce heat. Continue basting and turning until glaze forms a glossy, slightly caramelized coating.
Finishing & Serving
Rest sausages
Transfer sausages to a plate and let rest 3–5 minutes to allow juices to redistribute.
Slice and garnish
Slice sausages on the bias into 1/2-inch pieces if serving as an appetizer or leave whole for mains. Arrange on a platter, drizzle with reserved glaze and extra hoisin sauce to taste, then sprinkle with sliced green onions and toasted sesame seeds. Serve with lime wedges on the side if desired.

Serve hot with additional hoisin for dipping and steamed rice, crusty bread, or a simple salad alongside.
