Prepare the Broth

Start by blanching the beef bones. Place them in a large pot, cover with cold water, and bring to a boil. Once boiling, drain and rinse the bones to remove impurities.

Make the Flavor Base

In the same pot, add the blanched bones back in along with 3 liters of water. Add the onion (halved), ginger (smashed), star anise, cinnamon stick, and cloves. Bring to a boil, then reduce to a simmer and cook for at least 3 hours, skimming any foam that rises to the surface.

Season the Broth

After 3 hours, strain the broth to remove the solid ingredients. Return the broth to the pot and add fish sauce and salt to taste.

Prepare the Noodles and Meat

Soak the rice noodles in hot water for about 30 minutes or until softened. Thinly slice the beef brisket or sirloin.

Assemble the Pho

In a bowl, place a portion of softened rice noodles, top with raw beef slices, and ladle the hot broth over the top. The heat from the broth will cook the beef.

Garnish and Serve

Serve the pho with fresh herbs, bean sprouts, lime wedges, and sliced chili peppers on the side for customization.
