Prepare the Broth

In a large pot, add the beef bones and pork hocks, cover with water, and bring to a boil. Skim off any foam that rises to the surface.

Add Aromatics

Add the onion, lemongrass (bruised), fish sauce, and chili oil. Reduce heat and simmer for 2 hours.

Cook the Meats

After 2 hours, add the beef shank. Continue to simmer for another hour until the meat is tender.

Season the Broth

Remove the meats and set aside. Strain the broth and return it to the pot. Season with salt and sugar to taste.

Prepare the Noodles

In a separate pot, cook the rice noodles according to package instructions. Drain and set aside.

Assemble the Bowls

Place cooked noodles in bowls. Slice the cooked beef shank and pork hocks, and arrange on top of the noodles.

Serve and Garnish

Ladle the hot broth over the noodles and meat. Garnish with green onions, cilantro, bean sprouts, lime wedges, and sliced chili peppers.
