Brown the beef
Heat 1 tablespoon vegetable oil in a large skillet or medium Dutch oven over medium-high heat. Add the ground beef and break into pieces with a spatula. Cook until browned with no pink remaining, about 6–8 minutes. Drain excess fat if desired, leaving a little for flavor.
Build the chili base
Stir in 2 tablespoons tomato paste and cook 1–2 minutes to caramelize slightly. Add the canned diced tomatoes (with juices), beef broth, drained kidney beans, chili powder, cumin, smoked paprika, brown sugar, ranch seasoning mix, hot sauce, 1 teaspoon salt, and 1 teaspoon black pepper. Stir to combine.
Simmer
Bring the mixture to a gentle simmer, reduce heat to low, and cook uncovered for 20–25 minutes, stirring occasionally, until slightly thickened and flavors meld. Taste and adjust seasoning (add more salt or hot sauce if desired). Keep warm while preparing fries.

Cook fries
Cook the fries according to package directions for a crispy finish: either bake on a rimmed sheet at 425°F (220°C) for 20–25 minutes, flipping once, or deep-fry at 350°F (175°C) until golden and crisp, about 3–4 minutes per batch. If baking, toss fries with 1 tablespoon vegetable oil, 1 teaspoon salt, 1/2 teaspoon black pepper and 1/2 teaspoon smoked paprika before spreading in a single layer.
Finish
When fries are done, transfer them to an oven-safe platter or baking sheet and keep in a low oven (200°F/95°C) while assembling to stay warm and crisp.
Assemble & Serve
Layer fries and chili
Pile the hot fries onto a large platter or divide between individual serving plates. Spoon generous ladles of the warm spicy ranch chili evenly over the fries, spreading to cover most of the surface.
Add cheese and melt
Sprinkle shredded cheddar and pepper jack cheeses evenly over the chili-covered fries. Place the platter under a preheated broiler for 1–2 minutes, watching closely, until the cheese melts and bubbles. Alternatively, return to a 375°F (190°C) oven for 4–6 minutes to melt.
Finish with toppings
Drizzle ranch dressing over the melted cheese (about 1/2 cup across the platter) and dot with sour cream. Scatter pickled jalapeños, sliced scallions, and chopped cilantro over the top. Serve with lime wedges on the side for squeezing over just before eating.
Serve
