Make cane sugar syrup

Combine 0.25 cup raw cane sugar and 0.25 cup cold still water in a small saucepan. Warm over low heat, stirring constantly until sugar fully dissolves to make a simple syrup. Do not boil. Remove from heat and let cool to room temperature.

Add color/aroma (optional)

If using, stir in 1 teaspoon caramel color or burnt sugar syrup and 2 tablespoons cola syrup concentrate (if you have it) into the cooled cane syrup. This step is optional but helps approximate the deeper color and some flavor notes of Mexican Coke.

Stir the lime juice (1 tablespoon), lemon juice (1 teaspoon), 0.25 teaspoon food-grade phosphoric acid solution (optional — add only if you have and are comfortable using it) and 0.25 teaspoon vanilla extract into the cooled cane syrup until fully incorporated. Taste the syrup and adjust acidity or vanilla to preference, keeping flavors balanced (bright citrus + subtle vanilla).

Water & Carbonation

Chill a tall glass and fill with about 1 cup of large ice cubes. Pour 12 oz (approximately one tall glass) of very cold carbonated water over the ice. Add all of the prepared syrup mixture to the carbonated water. Stir gently once or twice to combine without losing too much carbonation.

Garnish with a lime wheel or wedge on the rim. Serve immediately with a straw or stirrer. Optionally, present in a glass bottle or narrow-neck bottle to evoke classic Mexican Coke presentation.
