Prepare fish
Pat sablefish portions very dry with paper towels. Lightly score skin in a couple of places (do not cut through flesh) to help render fat and prevent curling.
Season both sides of each portion with 1/4 tsp salt and a light grind of black pepper. Reserve remaining salt for finishing if desired.
Combine 3 tbsp soy sauce, 2 tbsp mirin and 1 tbsp sake in a shallow dish. Place fish skin-side down in the marinade for 10 minutes (do not exceed 15 minutes) to lightly flavor the fish. Remove fish and blot very dry again before cooking; reserve marinade for finishing if desired.
Caramelized Ginger & Sauce
Prep ginger
Peel the ginger with the edge of a spoon or small peeler. Cut into very thin julienne strips so they soften quickly and caramelize evenly. Measure about 3 oz (roughly 3 generous tablespoons).
Caramelize ginger
In a medium sauté pan over medium heat, add 2 tbsp unsalted butter and 1 tbsp neutral oil. When butter foams, add the julienned ginger in a single layer and cook, stirring occasionally, until the ginger softens and begins to take on deep golden edges, about 6–8 minutes. Watch carefully to avoid burning.
When ginger is lightly browned, sprinkle 3 tbsp granulated sugar evenly over the pan. Stir constantly for 1–2 minutes as the sugar melts and begins to caramelize, coating the ginger. Continue cooking until the sugar becomes a translucent amber and the ginger is glossy, about 2–3 more minutes.
Stir in 1 tbsp rice vinegar to deglaze and stop the caramelization (it will sizzle). Add 1 tbsp dark brown sugar and 2 tbsp soy sauce; reduce heat to medium-low and simmer gently for 1–2 minutes until the sauce thickens slightly and coats the ginger. If the mixture becomes too thick, add up to 1 tsp water, one teaspoon at a time, to loosen.
Remove pan from heat and stir in 1 tsp fresh lemon juice and 1/2 tsp toasted sesame oil. Taste and adjust: add a pinch of salt or up to 1/2 tsp more soy if you prefer saltier.
Transfer most of the caramelized ginger and sauce to a small bowl for serving; reserve about 2 tbsp in the pan to baste the fish while finishing if pan capacity allows.
Finish & Garnish
Pan-sear the sablefish
Heat a large heavy skillet (preferably cast-iron) over medium-high until hot. Add 1 tbsp neutral oil and swirl. Place the sablefish skin-side down, press gently with a spatula for 15–20 seconds to ensure even contact. Sear without moving until the skin is deep golden and crisp, about 4–6 minutes depending on thickness and how hot the pan is. Reduce heat to medium-low if the skin is browning too quickly.
Flip the fillets carefully and add the reserved 2 tbsp caramelized ginger sauce to the pan (and any reserved marinade if you like, but do not pour raw marinade into the pan if it touched raw fish). Spoon the sauce over the flesh once or twice, then cook the fish on the flesh side just until the center is opaque and flakes easily, about 2–4 minutes more (internal temp target ~135–140°F for sablefish).
Transfer fish to a warm plate. Spoon a generous portion of the caramelized ginger and sauce over each fillet and let rest 1–2 minutes.
Garnish and serve
Top each portion with a sprinkle of toasted sesame seeds, a few thinly sliced scallion greens, and microgreens or cilantro. Drizzle a few drops of toasted sesame oil around the plate and place a lemon wedge alongside. Serve immediately with steamed rice or simple sautéed greens.
