Clean mussels
Rinse mussels under cold running water. Discard any that are cracked or remain open when tapped. Scrub shells and remove beards by tugging toward the hinge. Set cleaned mussels in a bowl in the refrigerator while you prepare the sauce (up to 30 minutes).
Aromatics & Toasting Spices
Stir in the minced garlic, grated ginger, and chopped green chili. Cook 1–2 minutes until fragrant.
Sprinkle in ground cumin, ground coriander, turmeric, smoked paprika and red pepper flakes. Cook, stirring constantly, about 30–45 seconds to toast the ground spices and bloom their flavors.
Deglaze & Make Coconut Sauce
Raise heat to medium-high and pour in the white wine to deglaze the pan, scraping any browned bits from the bottom with a wooden spoon. Let it reduce by about half, 2–3 minutes.
Add the water or vegetable stock and bring to a gentle simmer. Stir in the coconut milk and reduce heat to medium. Simmer gently 4–6 minutes to allow the flavors to meld and the sauce to thicken slightly.
Taste the sauce and add kosher salt and black pepper. Stir in the fresh lime juice, then turn off the heat and keep the sauce hot but not vigorously boiling.
Cook Mussels in Sauce
Discard any mussels that remain firmly closed after 6 minutes. Give the sauce a final stir to incorporate juices released from the mussels. Taste and adjust seasoning with extra salt, pepper, or a squeeze more lime if needed.
Finish & Serve
Sprinkle chopped cilantro and sliced scallions over the mussels and sauce. Serve immediately with lime wedges and crusty bread or steamed rice to soak up the cumin-coconut sauce.
