Prepare eggplant

Wash the eggplant and trim off the stem. Cut into 1/2-inch thick sticks (like fries) by first slicing lengthwise into 1/2-inch slabs then cutting each slab into 1/2-inch batons. You should have roughly 12–16 fries per eggplant depending on size.

Place the cut eggplant in a colander, sprinkle with 1/2 teaspoon of the kosher salt, toss to coat, and let sit for 15 minutes to draw out excess moisture and any bitterness. After 15 minutes, pat dry thoroughly with paper towels. If using tender Japanese eggplant you can skip this step for 5–10 minutes.

Set up dredging stations

In three shallow bowls or pie plates: 1) combine the flour and cornstarch; 2) beat the eggs with the milk until smooth; 3) combine the panko breadcrumbs with 1 tablespoon of curry powder, turmeric, garlic powder, onion powder, smoked paprika, remaining 1/2 teaspoon kosher salt, and the black pepper. Mix until evenly seasoned.

Coat the eggplant

Work in batches to avoid soggy fries. First dredge each eggplant stick in the flour/cornstarch mixture, shaking off excess. Then dip into the egg wash, letting excess drip off. Finally press into the seasoned panko so the crumbs adhere well. Place on a wire rack set over a baking sheet while you finish coating the rest.

Heat oil

Pour neutral oil into a large skillet or 10-inch sauté pan to a depth of about 1/2 inch (about 1.5–2 cups depending on pan). Heat over medium-high until oil registers 350°F (175°C) on a thermometer or a small breadcrumb sizzles and browns in about 15–20 seconds.

Fry the fries

Fry the coated eggplant in batches without overcrowding — 4–6 pieces per batch depending on pan size. Cook 2–3 minutes per side, turning once, until golden brown and crisp. Maintain oil temperature between 325–350°F; reduce heat slightly if the coating browns too quickly before the eggplant is tender. Total cook time per batch ~4–6 minutes.

Drain and season

Use a slotted spatula or spider to transfer fries to a paper towel-lined baking sheet or plate to drain. Immediately sprinkle with a light pinch of salt while still hot. Keep finished fries warm on a baking sheet in a 200°F (95°C) oven while you finish remaining batches.

Finish and garnish

When all batches are cooked, transfer fries to a serving platter. Optional: sprinkle with chopped cilantro and serve with lime wedges on the side.

Thai Sweet Chili Dipping Sauce

Whisk together the store-bought Thai sweet chili sauce and rice vinegar in a small bowl until smooth. Taste and add up to 1/2 teaspoon sriracha if you want more heat. Stir in the chopped green onion if using. Transfer to a small serving bowl.

Serve the warm eggplant fries immediately with the dipping sauce alongside. For best texture, do not let fries sit too long — they are crispiest right after frying.
