Clean and slice

Rinse calamari under cold water. Pat dry thoroughly with paper towels. If tubes are whole, slice into 1/2-inch rings; keep tentacles whole or halved if large. Place in a bowl.

Season calamari with 1 tsp sea salt, 1/2 tsp white pepper and 1 tbsp lime juice. Toss to coat and let sit 5–10 minutes while preparing batter so flavors penetrate slightly. Pat dry again if excess moisture appears (very important for crispiness).

Make dry mix

In a mixing bowl combine 3/4 cup rice flour, 1/4 cup cornstarch, 1/4 cup all-purpose flour, 1/2 tsp baking powder, 1/2 tsp dry turmeric, 1/2 tsp ground coriander, 1/4 tsp white pepper and 3/4 tsp salt. Whisk to evenly distribute spices and leavening.

Make batter

In a separate bowl whisk together 1 large egg white, 1/2 cup thin coconut milk and 1/4 cup ice water until frothy. Slowly add the dry mix into the liquid, whisking to a smooth, slightly thick batter that will cling to calamari (aim for a consistency like heavy cream — adjust with small amounts of water or flour as needed). Let batter rest 5 minutes in the refrigerator to hydrate the rice flour.

Nyonya Spice Paste (for dipping & finishing)

Prepare spice paste

Peel and roughly chop 1 shallot and 1 garlic clove. If using fresh turmeric, finely grate the equivalent of 1/2 tsp; if using powder, add to the blender later. Deseed the dried red chili if you want less heat. In a small blender or mortar and pestle combine shallot, garlic, turmeric (fresh or powder), 1 dried red chili, 1/2 tsp toasted belacan, 1/2 tsp palm or brown sugar, 1 tsp tamarind paste (or lime juice), 1 tsp light soy sauce and 1/2 tsp coconut or neutral oil. Add 1 tbsp water to help blend. Pulse or pound to a coarse-smooth paste. Taste and adjust balance — add a little more sugar if too sour, or more tamarind/lime if it needs brightness.

Transfer half the paste to a small serving bowl for dipping. Reserve the other half to toss with the fried calamari for an optional glazed finish or to smear on the platter.

Finishing & Frying

Optional vermicelli nest

If using fine rice vermicelli, dry-fry 1/2 cup in a small skillet over medium heat, stirring, until slightly toasted and very brittle (about 2–3 minutes). Break into bite-size nests or small piles to serve as a crunchy bed for calamari.

Heat oil

Pour about 2 cups neutral oil into a heavy-bottomed pot or deep fryer. Heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter — it should sizzle and float immediately without browning too fast.

Batter and fry (first fry)

Working in small batches (to avoid overcrowding), dredge calamari pieces in the batter, letting excess drip off for 5–10 seconds. Carefully lower into the hot oil and fry 40–60 seconds until set and pale golden. Remove with a slotted spoon to a wire rack or paper towel-lined tray.

Second fry for crispiness

After frying all batches once, increase oil temperature to 375°F (190°C). Return the partially fried calamari in batches and fry 30–45 seconds more until crisp and deep golden. Drain on a wire rack. This double-fry method yields the crispiest texture.

Season and finish

While the calamari are still hot, toss gently with reserved half of the Nyonya paste (use sparingly — a little goes a long way) for a glossy, aromatic finish, or serve the paste on the side as a dipping sauce. Scatter toasted vermicelli nests (if using), sprinkle 2 tbsp chopped fresh cilantro and scatter 8 fried curry/kaffir lime leaves if desired. Serve immediately with lime wedges.
