Caramel

Method

Caramel Preparation

  1. 1

    Make the Caramel

In a medium saucepan over medium heat, combine the granulated sugar and water. Stir gently until the sugar dissolves.

  2. 2

Continue cooking without stirring until the mixture turns a golden brown color. This should take about 10 minutes. Be careful not to burn it.

  3. 3

Immediately pour the caramel into a round baking dish, tilting the dish to evenly coat the bottom. Set aside to cool.

Flan Preparation

  1. 4

    Prepare the Flan Base

In a blender, combine the sweetened condensed milk, whole milk, eggs, and vanilla extract.

  2. 5

Blend on high until smooth and well combined, about 1-2 minutes.

  3. 6

    Pour and Bake

Carefully pour the flan mixture over the cooled caramel in the baking dish.

  4. 7

Place the baking dish in a larger baking pan and fill the larger pan with hot water until it reaches halfway up the sides of the flan dish.

  5. 8

Bake in a preheated oven at 350°F (175°C) for 50-60 minutes, or until the flan is set and a knife inserted in the center comes out clean.

  6. 9

    Cool and Unmold

Remove the baking dish from the water bath and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

  7. 10

To unmold, run a knife around the edges of the flan and invert it onto a serving plate. The caramel will flow over the flan.
