Preparation

1

Prepare the Marinade

In a bowl, mix together olive oil, minced garlic, chopped rosemary, soy sauce, honey, black pepper, and salt. Whisk until well combined.

2

Marinate the Pork

Place the pork tenderloin in a large resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

3

Preheat the Oven

Preheat your oven to 200°C (400°F) while the pork is marinating.

Cooking

4

Prepare the Vegetables

In a large mixing bowl, combine the sliced carrots, cubed potatoes, and quartered onion. Toss with a drizzle of olive oil, salt, and pepper to taste.

5

Roast the Pork and Vegetables

Place the marinated pork tenderloin on a baking sheet or in a roasting pan. Arrange the vegetables around the pork. Roast in the preheated oven for about 25-30 minutes or until the pork reaches an internal temperature of 63°C (145°F).

6

Rest the Pork

Once the pork is cooked, remove it from the oven and let it rest for 5-10 minutes before slicing to allow the juices to redistribute.

Serving

7

Slice and Serve

Slice the pork tenderloin into medallions and serve alongside the roasted vegetables. Drizzle any remaining juices from the roasting pan over the top for added flavor.
