Preparation
Peel and Slice the Plantains
Using a sharp knife, carefully peel the green plantains. Cut off both ends and make a lengthwise slit in the skin to help peel it away. Once peeled, slice the plantains into 1-inch thick pieces.
Season the Plantains
In a mixing bowl, combine the sliced plantains, salt, garlic powder, and black pepper. Toss until the plantains are evenly coated with the seasoning.
Frying
Heat the Oil
In a large frying pan or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of plantain; if it sizzles, the oil is ready.
Fry the Plantains
Carefully add the seasoned plantain slices to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.
Drain Excess Oil
Once fried, remove the plantains using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
