Preparation of Steak

    If needed, trim any excess fat from the picanha steak, leaving a thin layer to enhance flavor during grilling.

    Generously sprinkle kosher salt and black pepper over both sides of the steak, rubbing it into the meat. Let it rest at room temperature for about 30 minutes to enhance flavor.

    In a small bowl, mix minced garlic, olive oil, chopped rosemary, and lemon juice.

    Place the picanha steak in a resealable plastic bag or a shallow dish, pour the marinade over the steak, and seal or cover. Let it marinate in the refrigerator for at least 1 hour, preferably overnight.

Grilling the Steak

    Preheat your grill to high heat (about 450°F/232°C). Ensure the grates are clean and lightly oiled.
