Grilling the Picanha

    Prepare the Meat

    Trim excess fat from the Picanha, leaving a 1/4 inch layer. Cut the meat into thick slices (about 1.5 inches each).

    Season the Meat

    Generously season both sides of the Picanha slices with kosher salt and black pepper. Allow the meat to sit at room temperature for about 30 minutes.

    Preheat the Grill

    Preheat your grill to high heat (about 450-500°F).

    Grill the Picanha

    Place the slices of Picanha on the grill, fat side down. Grill for about 4-5 minutes per side for medium-rare, adjusting time for desired doneness.

    Rest the Meat

    Remove the Picanha from the grill and let it rest for 5-10 minutes before slicing against the grain.

Cooking the Rice

    Rinse the Rice

    Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice, 2 cups of water, olive oil, and 1 tsp of salt. Bring to a boil over medium-high heat.

    Simmer

    Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes or until the rice is tender and water is absorbed.

    Fluff the Rice

    Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Preparing the Beans

    In a medium saucepan, heat 1 tbsp of olive oil over medium heat. Add chopped onion and minced garlic, sautéing until fragrant and translucent (about 3-4 minutes).

    Add the canned black beans (drained and rinsed) to the saucepan, along with cumin, salt, and black pepper. Stir to combine.

    Cook the beans over medium heat for about 10 minutes, stirring occasionally, until heated through and flavors meld.
