Preparing Beans

Soak the Beans
Rinse the black beans under cold water and place them in a large bowl. Cover with water and let soak overnight or for at least 8 hours.

Cook the Beans
Drain the soaked beans and transfer them to a large pot. Add 6 cups of fresh water and bring to a boil. Reduce heat and let simmer for about 1 hour or until beans are tender. Set aside.
Cooking the Stew

Sauté the Meats
In a large heavy pot, cook the chopped bacon over medium heat until crispy. Add the pork shoulder, beef chuck, chorizo, and smoked sausage. Cook until browned on all sides.

Simmer the Stew
Reduce the heat to low, cover the pot, and let simmer for at least 1.5 to 2 hours, stirring occasionally. The stew should be thick and flavorful.
