Marinade

Method

Preparation

  1. 1

    Prepare the Marinade

In a large bowl, combine minced garlic, chopped parsley, olive oil, lemon juice, salt, black pepper, and paprika. Mix well to create a marinade.

  2. 2

    Marinate the Meats

Add beef ribs, pork tenderloin, chicken thighs, and sausages to the marinade. Ensure all meats are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cooking

  1. 3

    Prepare the Grill

Preheat your grill to medium-high heat. If using charcoal, wait until the coals are covered with white ash.

  2. 4

    Cook the Meats

Remove the meats from marinade and place them on the grill. Cook beef ribs for about 4-5 minutes on each side, pork tenderloin for 6-7 minutes per side, chicken thighs for 5-6 minutes per side, and sausages for 4-5 minutes, turning occasionally until cooked through.

  3. 5

    Prepare the Corn

While the meats are cooking, place the corn on the grill. Grill for about 10-15 minutes, turning occasionally until the corn is tender and slightly charred.

Serving

  1. 6

    Serve the Churrasco

Once cooked, remove the meats and corn from the grill. Let meats rest for 5 minutes before slicing. Serve with chimichurri sauce and potato salad.
