Prepare the Dough

Combine Dry Ingredients
In a large mixing bowl, combine the tapioca flour and salt. Mix well to ensure even distribution.

Mix Wet and Dry Ingredients
Pour the hot milk mixture into the bowl with the tapioca flour and salt. Stir with a wooden spoon until the mixture is well combined and forms a dough.

Add Eggs
Allow the dough to cool slightly, then add the eggs one at a time. Mix well after each addition until the dough is smooth and elastic.
Add Cheese and Bake

Incorporate Cheese
Fold in the grated cheddar cheese until evenly distributed throughout the dough.

Preheat Oven
Preheat your oven to 375°F (190°C) and grease a mini muffin tin or line it with paper liners.

Fill Muffin Tin
Spoon the dough into the prepared muffin tin, filling each cup about 3/4 full.

Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and puffed up.
