Preparing the Batter

Mash the Bananas

In a large mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.

Mix Dry Ingredients

In a separate bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon powder until well combined.

Combine Ingredients

Add the dry ingredients to the mashed bananas. Pour in the milk and vanilla extract, and mix until just combined. Do not overmix; some lumps are okay.

Frying the Fritters

Heat the Oil

In a deep pan or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles, it's ready.

Fry the Fritters

Using a tablespoon, drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown.

Drain and Dust

Once fried, remove the fritters from the oil and place them on paper towels to drain excess oil. Dust with powdered sugar while still warm.
