Method
Prepare and Dry the Wings
Pat the 8 split wings thoroughly dry with paper towels. Removing surface moisture helps achieve crispy skin.
Place the wings in a large bowl. Sprinkle 1 tsp kosher salt, 1 tsp black pepper and 1 tbs aluminum-free baking powder over the wings. Toss until evenly coated. The baking powder raises pH and helps crisping.
If time allows, transfer coated wings to a wire rack set over a sheet pan and refrigerate, uncovered, for 1 hour (or up to overnight) to dry the skin further. If short on time, proceed immediately.
Seasoning
In a small bowl combine the dry rub: 1 tsp smoked paprika, 1 tsp garlic powder, 0.5 tsp onion powder, 0.25 tsp cayenne pepper and 1 tsp packed brown sugar. Mix well.
Sprinkle the dry rub over the wings and toss to coat evenly, ensuring all pieces have a light, even coating.
Cooking the Wings (Oven Method)
Preheat and Arrange
Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with foil and set a wire rack on the sheet. Arrange the wings in a single layer on the rack, leaving space between pieces for air circulation.
Bake
Bake for 25 minutes. Rotate the pan and flip each wing, then continue baking for an additional 15–20 minutes until skin is deep golden-brown and crisp and an internal temperature of 165°F (74°C) is reached. Total cook time ~40–45 minutes depending on oven and wing size.
Optional Broil for Extra Crispiness
If you want extra crisp skin, switch oven to broil on high for 2–3 minutes, watching carefully to avoid burning. Remove when edges are browned and crisp.
Optional Buffalo-Style Sauce
While the wings bake, melt 2 tbs unsalted butter in a small saucepan over low heat or in a microwave-safe bowl. Stir in 3 tbs hot sauce, 1 tsp honey and 0.5 tsp lemon juice until combined and warm.
When wings are done, place them in a large clean bowl, pour the warm sauce over them and toss gently to coat. Serve immediately with 0.5 cup blue cheese or ranch dressing on the side for dipping.
Serve
Arrange wings on a platter, garnish optionally with chopped fresh parsley or celery sticks, and serve hot. Provide extra napkins—these are best eaten immediately.
