Prep

Pat wings dry with paper towels. If whole wings are used, separate into drumettes and flats and discard tips or save for stock.

Place wings in a large bowl. Add kosher salt, 1/2 tsp black pepper, and baking powder. Toss thoroughly to coat each wing evenly. The baking powder helps crisp the skin.

Let wings rest uncovered in the refrigerator for 30–60 minutes if time allows (this further dries the skin). If short on time, proceed immediately.

Choose cooking method: - Oven: Preheat to 425°F (220°C). Arrange wings on a wire rack set over a rimmed baking sheet, skin side up, leaving space between pieces. Brush or spray with the 2 tsp vegetable oil. Bake 35–45 minutes, turning once halfway, until skin is deep golden brown and internal temperature reaches 165°F (74°C). - Air fryer: Preheat to 400°F (200°C). Arrange wings in a single layer (work in batches if needed). Cook 18–22 minutes, shaking or turning at 9–11 minutes, until crispy and cooked through. - Fryer: Heat oil to 350°F (175°C). Fry wings in batches 8–10 minutes until golden and cooked through, then drain on paper towels.

Make sauce

While wings are cooking (or in a small saucepan on low heat), melt 4 tbs unsalted butter with 1 tbs olive oil over medium-low heat. Add the minced garlic and cook gently 45–60 seconds until fragrant but not browned (if garlic browns it becomes bitter).

Remove pan from heat and immediately stir in 3/4 cup grated Parmesan cheese until slightly melted and evenly combined. Add 2 tbs chopped fresh parsley, 1 tsp lemon juice, and 1 tsp hot sauce if using. Taste and adjust seasoning with salt and black pepper to taste.

Toss wings in sauce

Place hot cooked wings in a large clean bowl. Pour the warm garlic-Parmesan sauce over the wings and toss gently until each wing is coated. If you prefer extra loose sauce, reserve 1–2 tbs before tossing to drizzle when serving.

Plate and finish: Sprinkle an additional 1–2 tbs grated Parmesan and a light pinch of chopped parsley over the wings for garnish. Serve immediately with lemon wedges and your choice of dipping sauce or celery sticks.
