Prepare and sweat eggplants

Trim the stem ends from the eggplants and slice into 1/2-inch thick rounds. Lay slices in a single layer on a wire rack or a paper towel–lined sheet. Sprinkle both sides lightly with the fine salt and let sit for 20–30 minutes to draw out bitterness and moisture. After sweating, pat slices dry with paper towels.

Set up breading station

Place the flour in a shallow bowl. In a second bowl, whisk the eggs and milk until combined. In a third shallow bowl, mix the breadcrumbs, grated Parmesan, dried oregano, garlic powder, kosher salt, and black pepper. If breadcrumbs feel moist, spread them on a tray and warm in a 300°F/150°C oven for 5–8 minutes, then cool slightly.

Bread the slices

Working in batches, dredge each eggplant slice in flour, shaking off excess, then dip into the egg mixture, letting excess drip, then press into the breadcrumb mixture to fully coat. Place breaded slices on a tray in a single layer while you heat the oil.

Shallow fry eggplant

Pour vegetable oil into a large skillet to a depth of about 1/4 inch and heat over medium until shimmering (about 350°F if using a thermometer). Fry eggplant in batches without crowding, 2–3 minutes per side, until golden brown and crisp. Transfer to a paper towel–lined plate and season lightly with a pinch of salt. Keep warm on a baking sheet in a 200°F/95°C oven if needed.

Prepare sauce

In a medium saucepan heat 1 tablespoon extra-virgin olive oil over medium heat. Add the minced garlic and cook 30–45 seconds until fragrant but not browned. Add the marinara sauce, red pepper flakes, and torn basil. Simmer gently 8–10 minutes to meld flavors. Taste and season with salt and pepper if needed.

Heat and combine with eggplant (optional)

For a classic eggplant parm profile, spoon a thin layer of sauce into a baking dish, arrange a layer of fried eggplant, top with more sauce and pieces of fresh mozzarella, and finish with grated Pecorino. Bake at 375°F/190°C for 8–10 minutes just to melt the cheese and warm through. Alternatively, simply spoon warm sauce over fried eggplant slices when assembling the sandwich without baking; both approaches work—baking gives a melty interior.

Prep rolls

Slice each hero roll lengthwise, leaving a hinge if preferred. Lightly butter the cut sides and optionally toast face-down in a hot skillet or under a broiler for 1–2 minutes until golden and crisp. Brush the inside lightly with olive oil if you prefer no butter.

Assemble the sandwich

Spread a thin layer of warm marinara on the bottom half of each roll. Layer 3–4 breaded eggplant slices (more for larger rolls), spoon additional sauce over the eggplant so each slice is saucy, then distribute torn or sliced fresh mozzarella across the eggplant. Sprinkle with the grated Pecorino and a few basil leaves. Add a small handful of arugula or shredded romaine if using for freshness and bite.

Finish and serve

Close the roll and press gently. If you want the cheese more melted and the sandwich warmed through, wrap in foil and place in a 350°F/175°C oven for 5–7 minutes. Slice the hero in half on the diagonal and serve immediately with extra marinara on the side for dipping.
