Prepare the Catfish

Rinse catfish fillets under cold water and pat dry with paper towels.

In a large bowl, combine buttermilk and hot sauce. Add the catfish fillets, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes.

Prepare the Breading

In a shallow dish, mix together the cornmeal, flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

Coat the Catfish

Remove catfish fillets from the buttermilk mixture, allowing excess to drip off.

Dredge each fillet in the cornmeal mixture, pressing lightly to ensure it adheres on all sides. Set aside on a plate.

Fry the Catfish

Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).

Fry the catfish in batches, 4-5 minutes per side or until golden brown and cooked through. Drain on paper towels.
