Prepare the Toasted Rice

In a dry skillet over medium heat, add the rice and toast, stirring constantly, until golden brown and fragrant. Allow to cool, then grind into a coarse powder using a mortar and pestle or a spice grinder.

Cook the Rabbit

In the same skillet, add the ground rabbit and cook over medium heat until browned and cooked through, about 5-7 minutes. Break up any large clumps while cooking.

Mix the Larb

In a large bowl, combine the cooked rabbit, toasted rice powder, chopped Thai basil, mint, cilantro, sliced scallions, minced shallots, and finely chopped Thai chilies.

Dress the Salad

In a small bowl, whisk together the fish sauce, lime juice, and palm sugar until the sugar is dissolved. Pour this dressing over the rabbit mixture and toss well to combine.

Serve

Serve the Rabbit Larb immediately at room temperature with fresh vegetables and lettuce leaves for wrapping.
