Method

Cooking the Steak

1

Prepare the Steak

Season the Wagyu steak with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat.

2

Sear the Steak

Add the steak to the skillet and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from heat and let it rest for 5 minutes.

Cooking the Eggs

3

Prepare the Eggs

In a small pot, bring water to a gentle boil. Carefully add the eggs and cook for 6-7 minutes for a soft-boiled texture. Remove eggs from water and place them in an ice bath to stop cooking.

4

Season the Eggs

Once cool, peel the eggs and drizzle shoyu over them.

Plating

5

Serve the Dish

Slice the rested steak and plate it with the shoyu eggs. Drizzle ponzu sauce over the steak and eggs. Garnish with shredded daikon radish and micro cilantro.
