Cook the Plantains

Peel and slice the ripe plantains diagonally into 1/2-inch thick pieces. In a skillet, melt the butter over medium heat. Add the sliced plantains and cook until golden brown, about 3-4 minutes on each side.

Make the Sauce

Once the plantains are cooked, sprinkle the brown sugar and cinnamon over them. Carefully pour the dark rum into the pan, and let it simmer for a couple of minutes until the sugar has dissolved and the sauce thickens slightly.

Prepare the Brittle

In a saucepan, combine granulated sugar and water over medium heat. Stir until the sugar dissolves. Bring to a boil without stirring until the mixture turns a golden caramel color. Remove from heat and stir in the dark rum and chopped nuts. Pour the mixture onto a parchment-lined baking sheet and let it cool completely before breaking into pieces.

To serve, place a few plantains in a bowl, drizzle with the sauce from the skillet, and top with a scoop of vanilla ice cream. Garnish with pieces of rum brittle for added texture and flavor.
