Method
Brioche Crisp Preparation
Prepare the Brioche
Preheat the oven to 375°F (190°C). Brush the brioche slices with olive oil and sprinkle with salt. Place on a baking sheet and bake for 10-12 minutes until golden and crisp.
Roasted Grapes Preparation
Roast the Grapes
Toss the grapes with olive oil and honey. Spread them on a baking sheet and roast in the oven for about 15 minutes, until they are soft and slightly caramelized.
Vinaigrette Preparation
Make the Vinaigrette
In a bowl, whisk together peanut butter, rice vinegar, soy sauce, Thai chili paste, and water until smooth. Adjust seasoning to taste.
Kaffir Lime Jelly Preparation
Prepare the Jelly
In a saucepan, combine water, sugar, and kaffir lime leaves. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat, strain out leaves, and dissolve gelatin in the warm mixture. Pour into a mold and refrigerate until set, about 2 hours.
Assembly
Assemble the Panzanella
In a large bowl, combine the brioche crisps, roasted grapes, and fresh Thai herbs. Drizzle with the peanut-thai chile vinaigrette. Serve with cubes of the kaffir lime jelly on the side.
