Brown Butter Spongecake

Prepare the Brown Butter

In a saucepan, melt the butter over medium heat until it becomes golden brown and has a nutty aroma. Remove from heat and let cool slightly.

Make the Batter

In a large bowl, whisk together the sugar and eggs until light and fluffy. Add the vanilla extract and brown butter, mixing well. In a separate bowl, combine the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.

Bake the Cake

Preheat the oven to 350°F (175°C). Pour the batter into a greased cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before serving.

Prepare the Gel

In a small saucepan, combine the mandarin juice and sugar over medium heat. Sprinkle the gelatin over the water and let it sit for 5 minutes. Once the juice mixture is hot, stir in the gelatin mixture until fully dissolved. Pour into a mold and refrigerate until set.

Make the Beet Leather

In a blender, combine the beet puree, sugar, and lemon juice until smooth. Spread the mixture thinly onto a parchment-lined baking sheet and dehydrate in a low oven (around 140°F or 60°C) for 6-8 hours until dried out but still pliable.

Passionfruit-White Chocolate Ganache

Prepare the Ganache

In a saucepan, heat the heavy cream until it just begins to simmer. Pour it over the white chocolate chips in a bowl and let sit for a minute. Stir until smooth, then mix in the passionfruit puree. Allow to cool slightly before using.
