Prepare the Chocolate Mixture

Preheat your oven to 200°C (400°F). Melt the dark chocolate and unsalted butter together in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.

Make the Batter

In a separate bowl, whisk together granulated sugar, eggs, egg yolks, and vanilla extract until light and fluffy. Gradually add the melted chocolate mixture, stirring until combined. Gently fold in the flour until just incorporated.

Bake the Cakes

Grease ramekins with butter and dust with flour. Pour the batter into the ramekins, filling them about 3/4 full. Bake in the preheated oven for 12-15 minutes, until the edges are firm but the center is still soft. Let cool for 1 minute before inverting onto plates.

Macerate the Berries

In a bowl, combine the mixed berries, Merlot wine, and granulated sugar. Stir gently and let sit for at least 30 minutes to allow the flavors to meld.

Nutella Creme

Prepare the Nutella Creme

In a mixing bowl, combine Nutella and heavy cream. Whip until you achieve a smooth and creamy consistency.

Make the Sugar Cage

In a saucepan, combine granulated sugar and water. Cook over medium heat until the sugar dissolves and turns a light amber color. Quickly pour the mixture over a whisk or a balloon mold to form a cage. Let cool and harden.
